Thanks! Not shaven. The cakes had a bit of a dome when removed but retracted almost perfectly. Full disclosure; I overmixed the batter just a bit. Not as delicate inside as I like, but still, it's delicious.My wife certainly felt hunger pangs when she looked at your picture. It looks a fine cake and picture. The sponge has risen really well and beautifully even, unless you cheated and shaved bits off. But it does not look like that. The folds of cream around the jam look just right.The top sprinkling of icing sugar, seems also to have small spots of water. It will not detract from the eating

I leave cakes to She Who Must Be Obeyed, but I bake a couple of sourdough loaves most weeks. They show up on my Instagram feed (@grenow) from time to time, but only as iPhone shots. Must shoot tomorrow's bread with the R6... ;-)
