Quick survey

NEF, compr. NEF, idem + fine or normal JPEG, only JPEG... it depends, but allways 10mp, Adobe or sRGB.
I prefer NikonView6 than PictureProject or CaptureNX.
If edit needed, in PhotoShop.
At last, I store the normal 10mp JPEG (2mb) with a 1/16 copy (80kb).

I shoot RAW because that will give me the best image quality the camera has to offer. I use Jpeg s at the same time because I can scroll through them much quicker on my pc, or even print straight from them if I'm in a rush and not demanding best IQ.

I'm trying compressed RAW at the moment for smaller files. So far I have not noticed the difference, but it's early days.
 
I shoot RAW+JPEG Basic, but the JPEGs are only used for proofing. I delete the JPEGs I don't want, then use the NEF Workflow Utility to automatically delete the corresponding NEFs. Finally, I delete the remaining JPEGs then work exclusively with the RAWs.

The only exception is if I need to take a LOT of shots, when I shoot JPEG Large Fine instead, but that's very rare.
