I recently bought a nikon d7000 with two lenses, 18-105mm and AF-S 50mm.

To test the focus, to evaluate the need for an AF finetune, I've shoot some charts with Live View on, and compared them to the same shots with LV off.
(Between each shot I've manually put the lenses focusing in the infinity.)

Since the pictures with LV on and off look very similar, with both lenses, can I assume that I don't really need to finetune this lenses?

Much thanks for your help!

Go take pictures with your new camera and enjoy! Any further tests should be in actual photography use situations, otherwise you could convince yourself you have problems which you don't. Great camera, have lots of fun.
