So I finally made the jump from the X-T5 to the Zf.

Really nice camera, but when I turned the shutter speed dial to 1/3 step and the iso dial to C, they are locked!

How can I unlock them?

Press the button the dial and rotate the dial. It only locks in the "C" position on the ISO dial and the "1/3 stop" position on the shutter speed dial. Otherwise it move freely without needing to press the button again. I don't really like the dial locks myself, but it is what it is.

Second, i would strongly recommend reading the manual if you haven't done so yet.

And the X, T and B positions on the shutter speed dial.

I felt so noob lol, with Fuji we can lock the dial by pressing the central button that's all, no settings that autolock
The early Fujis such as the X-T1 and X-Pro1 work similarly to the Zf 🙂
