How many want a narrow DOF?

Whenever I see photos from 5D they always seem to have that much more "impressive" look to them. I can not seem to point my finger on it, but they just look more real, more 3 dimensional. I think it could have something to do with DOF.

Than the Oly is the wrong camera until they considerably increase the
image sensor size along with the pixels...
Sorry, that's not the case. If you simply want lots of DOF, you're fine with a camera that:
1) offers quality that's sufficient at base ISO
2) has a good lens
3) offers the resolution that you need
Hassy is the right one for you, since there are no 8x10 digital ones.
Olympus is a compromise. Much DOF is not the same as sharp image with
a lot of details, as we have mentioned before.
True, it's not the same. That would be point 3 above. If there would be a 50MP 4/3 sensor with decent base ISO performance, coupled with a really sharp lens, you're set.

OTOH, if you print at A4 (or 8x10) size, 10MP is more than sufficient.
