How do I disable AI "enhancements" on S24 Ultra?

This weekend I did a bike ride with family and friends and wanted to take a few dynamic pictures - something which is very easy with a "normal" camera: you preset shutter speed to 1/60 or 1/125 (depending on the speed of the subject), follow the motion of the subject and you get a nice sharp subject with a blurred background, which gives the viewer a sense of speed.

Tried to do that with the S24 Ultra and failed miserably. I used "expert raw", where you can chose the shutter speed, but one issue was that exposure in bright sunlight was too bright (not sure if the builtin "ND filter" kicked in, I tried to enable it but then everything went white), but even worse was that the picture looked exacly like I wanted it to look immediately after pressing the shutter - but after a second of processing, the dumb AI "fixed" the blurred background to make it sharp again. Yikes!

Does anybody know how to stop the phone from doing that? Or even how to remove this kind of "enhancement" after the fact? Any hints on how to achieve this effect that used to be dead simple on "dumb cameras"?
 
You can use ProMode or a third Party app to even shoot raw (but only 12MP).

ExpertRAW could work but it's still computational photography that could do funny things with motion (like make the background sharp you wanted blurred).

You don't turn computational photography off, that's only off in ProMode.

Those extreme white photos are a bug that already existed on the S23U and seems to be back with the latest ExperRAW update. It will only happen in 50MP mode and even there not always. You should contact Samsung through the members app and send them the files.

while 23U camera may be different, believe the app is now the same.

In camera settings/intelligent optimisation disable 'scene optimiser' . In Camera assistent you may wish to disable Auto HDR. This tames the wild Samsung processing a bit.

In RAW app, the same Auto HDR to off (and also you may want to disable High Efficiency RAW). ND is only active in 12M picture mode, pay attention to modes - when you tap for example SPEED, the default is A with the shutter speed. Next to the line of vertical lines there is a 'button' AUTO. If you tap it, it goes Manual and STAYS like that even if you close the app. SO you must know what you are doing if you opt for Manual everything. The same is if you tap for example Astro mode (zigzaggy line at the top), it turns yellow and stays like that.

The great power comes with the great responsibility. There is no 'too bright sun' for phone cameras in auto mode (default app). ND will also not kick in on it's own, YOU must select it.
