How do you prove the date-time setting in the camera was correct when
you shoot the picture. You may change the date and time in the
camera, take some pics, and change it back to the right date-time.

I provided an written statement that the time stamp is correct, and that there has been no cs editing.
Rather like when cops say I got finger prints off the gun.
But in most cases the pix speak for themselves. As an example I took some pix of repair work a condo association did to mitigate flooding from runoff from rain storms.
The time stamps were from different days, with the water level of the standing water in different places, with hedges trimmed differently and grass cut shorter or longer.
For all the arbitrator knew my time stamps were off by days or weeks. But it was clear over a period of weeks after the retaining wall was constructed there was still a drainage problem. The fact that I was willing to swear under oath that the time stamps were correct was interesting and the arbitrator believed me as far as I could tell. But more important was the fact that the pix indicated standing water over a period of time.
I also took before and after pix of a car that was damaged in an accident; and then damaged more while being towed. Again the time stamps were interesting, but not nearly as important as a new basket ball size dent in the car's door. In this case I was backed up by the accident report by the police describing the damage that did not include the new dent.
If necessary I am ready with a laptop and RAW files to show just how I got the final pix, but if the truth be known this is really more like piling on than the whole case being based on a single image.
