I'm going to be picking up an A6600 shortly, along with the Sigma 18-50 f2.8 and the Sony 70-350.

I'd like a bag I can store the camera + lens in PRIMARILY to protect against elements or knocks. It DOES NOT need to carry the extra lens. In fair weather I'll just have the a6600 on my peak design capture clip, but in worse weather I'd like to keep it out of the elements as well as some protection against rocks/branches/etc.

Is there some basic holster/bag that would accommodate this that isn't overly bulky/padded/added with a million other zippers?

The older Lowepro Top loader/TLZ models were pretty basic, but they were padded to keep from banging against your body.

You could try a simple neoprene pouch worn with an over-the-shoulder strap and/or a waist belt. I use a large Zing pouch sometimes to carry my A7R III with a ca. 375 gram lens. A similar simple pouch (or a somewhat smaller fitted neoprene case) might work for you.

Too much information:

With my camera this works best with a shoulder strap attached to the camera. The camera is dumped into the neoprene bag that is held by a lightweight waist belt via the sewn belt loops. The belt and the shoulders strap share the weight and together keep the camera from bouncing. It's OK with only the waist belt, but it bounces a bit more. At ten ounces (without the straps) it's a bit heavier than you might like.

I use a Capture Clip when I carry a pack, but a simple pouch with waist attachment works some times. I use a small lumbar pack (with a padded camera insert) when I want to carry more than one lens.

I'm not sure if you consider this minimalist or not, but take a look at Think Tank Digital Holster series. They have a nice feature that allows the bottom to extend to hold longer lenses when needed. All of their holsters have this feature except their smallest size holster, the Digital Holster 5.

The TT digital holsters are excellent and very well made.

Use one for my D810 / 70-200 VRII with hood attached. Keep a TC-14E in the solo pocket.

Love it!

I don't know about the size of the A6600, but this is the holster case I used for a Nikon P900/Sony RX10iv and Nikon D7000 (with prime 30 or 50mm lens - not large enough for my 70-300mm) and I love it: https://www.amazon.ca/Evecase-DSLR-Camera-Nylon-Holster/dp/B00FEY29GA/

I normally have worn either a Joby strap or currently a Cotton Carrier when I'm out in good weather. But for a bag that minimally holds the camera (and can be stuffed with the charger etc. for travel), this has been my go-to for years. I have even cinched the strap up tight and worn it around the waist, like a big camera "fanny pack" so that I could wear the camera with the strap like normal, but rest it, almost floating, in the open case when I'm out in crowds at a market or something and want hands free but extra protection and security for the camera.

I recently upgraded to this for my D7500 with 70-300 attached (since that's my out-and-about birding lens, and I wanted something that could accommodate it when I go out with only this lens): https://www.amazon.ca/gp/product/B004OVE2G4/

Just in case either of those are helpful, or lead to better options!

ROUTE Pack | WANDRD - WANDRD Gear

The Route is a chest carry/over the shoulder holster design. Its nice and expandable depending on your lens which is handy.
Ah looks like it may be just the thing. Will look into it more!

On first look, it looks like it may simply be too big for a crop compact setup though unfortunately!
It fits my Canon 90D [crop DSLR] and 24-70 or 70-200 2.8 expanded. With a 24mm pancake and 50mm I can fit both with out extension and room to spare. Depends on the overall size of your gear.

When it is expanded, does it offer some padding in the extended zone? or it is just fabric in that area?

Interior of bag with bottom zipped, can see how material is folded when collapsed

Bottom of bag unzipped, not fully extended - shows fold to to collapse

Extended side shot, the stitching on the side helps with the folding

Extended body side, same ballistic nylon material as seen above edges

Extended outside

As I think can be seen from the shots, the material is the same on all parts of the bag. The exterior square makes up the bottom of the bag when not extended.

I bought a Billingham Hadley Digital as a minimalist bag. It's amazing. I can either carry my D300S with grip attached, and a single zoom,

Or

My Sony a6000 with FE24240 and hood extended.

At the time I was able to buy it relatively cheaply. However, that vendor has gone out of business. I have seen it discounted at B&H in the US. It's amazing.

I trust it more in wet weather than other choices. I do have Peak Design 6L sling. I haven't/won't test it in heavy rain.

Wandr route pack size is perfect for an A7 + canon 300 f4 adapted. Probably the 400 f5.6 will also fit perfectly although I did not tried. But the shoulder strap is a pain. It is far too thin for heavy lens plus camera, and no shoulder pad is available.
