Is there a list of lenses that are fully compatible (i.e. AF, metering, EXIF, etc...) with the M2 when using the EF-EF-M adapter? Specifically, I am interested about the EF 40mm, but a general list would be even more useful for future reference.

I have the M and M3. The 40mm is very nice on an M. Generally, all lenses can be used, but they will perform differently. For best performance try to select Canon's newest lenses. Older lenses like the 50 1.4 and 85 1.8 will not perform as well as newer designs. They may struggle with AF. I like the 40mm, new 50 STM, 35 2 IS and other new lenses. Also, smaller lenses, like the ones I have listed, are the best match for the body. Larger lenses are just plain awkward.

may I ask the question why you believe there are EF/EF-S lenses that aren't 100% competible ?

The EF-M adapter is nothing else but a tube of 2cm length and a set of wires inside that connects two different mechanical mounts of different diameter

There is no intelligence build into the adapter as all EF/EF-S and EF-M mounts are using the same communication protocol

When I had the M, all my L glass worked happily with it.

I'm also interested in this, but more how they will work. Will for example my 100 mm L macro lens work similar to using the optical viewfinder or live view, because it very slow and hunts in live view and fast otherwise? I use it on a 6D.

Because the M3 had a list from Canon of specific lenses that did NOT work

Do you know if this list applies to the M2?
No, the M2 does not have a list (that I am aware of). Everything seems to work on the M2, it is just slow in general. I personally have a couple lenses that worked far better on my M2 than my M3.
And what about the M5?
A complete unknown at this point. Canon changed something in the AF protocols that broke lens compatibility from the M2 to M3. Does the M5 undo that change, maintain the change, or introduce a bunch of different issues due to DPAF? Completely unknown at this point.

100L is faster with M family than with older DSLRs in LV. 100L is generally slow when it did not nail the focus for the first time.

50/1.4 and 85/1.8 are not slower than EF-M 22/2.0 STM.

Original M can even acquire focus with S150-600C and 1.4x Kenko DGX. It's slow though.

The most problematic are old third party lenses.
