E-5 ISO 1600~Subject grainy when backlit~

Switch off auto gradation if you use jpeg. Use fill flash. If flash not possible, blow up the background. Don't listen to those who say that 1% blown highlights in a picture is bad. I blown half of the image and still think looks good. Blown highlights have nothing to do with a good photo, depending of what is blown, other things matter.

If your subject is backlit, it will typically be underexposed big time. Noise is usually the worse in underexposed areas.

As said above - use flash, or spot meter on the subject. It will blow your background, but hey...
 
If you can't use flash or reflector, and you can keep your subject still long enough, take two (or more) shots w different exposures. One metered for the subject, one for the background, then combine in PPusing properly exposed subject from one, and properly exposed background from the other.

But you can't expect noise free detail in the shadows at high ISO... at least not w the current Panny sensors
