The stellar advance is 4K capability (the previous version maxed out at 2.7K). But, an overlooked improvement is a new FOV - MEGA.

MEGA has a minimal crop and thus a wide view, but vertical bending and edge stretching are all but eliminated. Those traits are annoying to many, who shun action cams because of the "fisheye" distortions. Here they are really almost gone, with seemingly little compromise to resolution and stabilization.

The new version also added stereo sound.

This 4K video demonstrates the stereo sound, uses the new MEAG FOV, and tests the resolution and stabilization (including walking briskly with the camera).

The results are surprisingly good, including the dynamic range.

And the camera is by far the smallest of all cameras, action or not, that can shoot genuine 4K and have stabilization. Technology advances (GoPro not?).

[I did not receive any money, travel expenses, meals, or equipment from insta360, and I do not use YouTube videos as a means of increasing my income].

I get it that the Go3S beats GoPro with size.

But the GoPro H12B with MaxLens Mod 2.0 has up to 4k/60, HL with Linear/W/MSV/MHV and 10bit!

It looks like your video aligns to the GoPro MLM Linear mode with HL.

I agree that it looks like GoPro Linear, but MEGA crops much less (the GO 3S also has a heavily cropped Linear FOV) and no horizon leveling was used, and thus there is perhaps much less resolution loss. That is the technology at work. The image quality looks pretty good.

Of course, GoPro has 5.3K 10 bit, but has less flexibility of use.
