Question on exposure

I understand that for a "perfect" exposure, I should lock exposure on an item of 18% grey, then recompose and take the picture. However, when taking a picture of a spotlit performer on a darkened stage, what should I lock exposure to...?

In that case you'd either have to adjust the aperture (not necessarily desirable) or increase the ISO.
I can't figure out how to achieve EC+2 in M mode....if I push it,
the shutter speed falls way below for a handshot.
 
Use your histogram . . ., do a test shot or more, the lighting won't be changing.

In manual mode, EC is not available. However, you can achieve the same results. When metering in manual mode, you make changes in either the shutter speed, aperture or ISO to get the desired exposure. Using the manual metering scale inside your viewfinder, you place the needle in the dead center for an exposure based upon the camera's exposure recommendations. If, however, you wish to override this recommendation and do a +2 EC, simply make adjustments to your shutter speed, aperture or ISO to place the needle two notches to the right of the center point in the viewfinder.
