See this thread from two months ago. I do not recommend 8GB for your uses. Furthermore the M1 processor will be slow to render video compared to RTX 3060 or similar.
Even the RTX 2060 (let alone 3060) is twice as fast as M1 at DaVinci rendering. That test is not accounting for the source codec. Depending on that source material you need to render a half or quarter size proxy to have smooth playback while editing on the high end graphics card while you can use the source material without a proxy on the M1…Even the RTX 2060 (let alone 3060) is twice as fast as M1 at DaVinci rendering.
