Hiking camera, weather sealed, small, light

Is there any options out there for a very compact/lightweight camera that is weather sealed? I take a lot of pictures on hiking adventures and rain is often an issue and weight. I currently own a Fujifilm XT-20 wich a love, but as soon as it rain or fog I need to put it away... I use my Samsung Galaxy S7 in the rain/fog but I was wondering if there's any options for a real camera.

Aside from the tough compacts (which would be overkill for this sort of thing), the best option would be an Olympus EM5 or EM1 series camera. The image quality is decent, even on the older cameras, and the weathersealing is very effective. I would look into a used EM5 with the 12-50 lens, or preferably the 12-40 f/2.8.

The only smaller option would be a Nikon AW1, in which the image quality isn't great although it would be better than a tough compact.

One of the Olympus Tough cameras, IMO, is the best solution.
 
Nikon AW1, but that is a dead system now it seems.

Olympus OM-D line of cameras with 12-50mm zoom (cheaper option) or 12-40mm zoom (expensive, but much higher quality) or 12-100mm (big, heavy and even more expensive).

Panasonic G80/85 with a 12-60mm kit lens (cheap option) or with 12-35mm or 12-60mm Leica (premium options). GX8 and GH5 are also weather resistant (not sure about GH4) but more expensive and a bit bigger I think.

Lenses between Olympus and Panasonic are interchangable.

Pentax DSLRs with WR kit zoom. It's a bit on the heavy side, though.

And there are of course 'tough' compact cameras. Those are actually water-proof usually up to 10-15 meters. Olympus, Nikon and Ricoh/Pentax make such cameras.

Panasonic G85 with 12-60mm kit zoom - both weather sealed - for $998.
 
If the X-T20 is not already on the cusp of being too heavy, you could just swap it out for an X-T2. However, I don't think any of the lenses you have are weather resistant, as Fuji calls it, and the WR standard zooms (18-135mm f/3.5-5.6 and 16-55mm f/2.8) are heavier than the lenses you currently have. Some of the primes are, though. Any Fuji lens with the WR label is advertised as weather resistant, so you can go over Fuji's lens lineup (link) and look for the WR lenses.
