How do you set manual focus override on the A7r2?

What I want to do is use flexible point AF but if it isn't hitting what I want Id like to be able to turn the focus ring to override the AF and grab the shot. Is this possible?
 
The default setting for the af/mf switch button is to toggle between af and mf when the switch is set to af/mf

Not sure if this what you're looking for... but it first gives you AF then drops you into MF if you turn the focus ring. However, it may only work on FE lenses... doesn't work on my adapted A mount lens.

Select "DMF" (I think it stands for Direct Manual Focus). I keep my camera in this mode most of the time.

In this mode camera will autofocus normally. So, you can point and shoot. But, if you half press the shutter and hold the autofocus, then, touch/turn focus ring on lens, it will allow you to manally adjust the focus. I have set up my camera to magnify image to help me focus easily. (Half press and hold of shutter will requir some practice).

Well, if you want to go through the menus, it's under camera-menu panel 3, Focus Mode. Scroll down for DMF. But most of us have Focus Mode assigned to a button or the Fn menu.
 
Is there anyway to set the camera to MF as soon as I start turing the focus ring rather then pressing the button?
Yes - that technique is called "back button focus". Brian Smith has written a lot about this here and on his blog. HIGHLY RECOMMENDED!

If using AF-S, I keep the shutter button half-pressed and simply adjust the focus, then fully press to shoot.

I don't have any FE lenses, but that works on all my adapted AF lenses.

DMF mode if you have a native lens. Sony should set this as the default because many never even try it.
