I am going to upgrade to the D300 from the D70, for which i have a collection of lenses.

What would be the dream lens to have for the D300 that I probably don't have for the D70?

A question this deep is obviously beyond this forum. You probably need to ask it in the D300 forum.

OK, not so purely a hobby.

Although this is a question for the D300 forum I also shoot with one. Your question is not clear and can be answered in many ways but I believe this covers it. I you only want one lens and nothing else then the 24 to 70 2.8 will cover the most useful range for most people. If you want a lens to shoot Telephoto then the most versatile single lens would be the 300 2.8 VR and a 1.4 teleconverter if you need extra reach. If you want a prime then it depends what you want to shoot but Nikons most magic lens is debatable but I go for the 200mm f2. For wide angle the 14 to 24 is very very good. Don't go for the 70 - 300 f2.8 VR as it is discontinued and very shortly there will be a new version.

You offer a couple of fine telephoto choices for someone with many thousands of dollars to spend. I might take issue with the 24-70/2.8 myself because for me it's the least useful range. The 14-24 works great on the D300, but some think it isn't wide enough.

It's 70-200, not 300. The lens can hardly be improved upon, the edges a little (and that's more of a problem with FX than with DX). I would say if you "need" it buy it, if you don't than don't; but don't wait to find out what's coming next because you could be waiting a long time.
