I have to say I learned a lot of a recent shoot at my church on Saturday. (Pics of Santa)

It was the first indoor shoot using 3 flashes - umbrella 580ex(left), 580ex on camera, and a 550 with a older light sphere(right rear). All set for E-TTL.

I figured with 3 flashes it would be easy to control the light and the shadows, and boy was I wrong!!! I tip my hats to all of you!! It was extremely hard to get the correct balance of the flashes (getting rid of the shadows). I kept moving things around trying different angles, raising up the umbrella, moving further way, closer. It was a small room where I was not able to do a 45 / 45 for the two - I ended up scrapping the light sphere and bouncing off of the side wall.

Do you set your light straight away and shoot from where your light placement is with one light?

For this type of event photography I prefer simplicity, so I setup
one softbox (4'x3') high above the camera.

Same here. I might throw in a hair light or background light depending upon what there is to work with but one light works well.

I recently did some santa and family photos at my church as well. I ended up using a 4' Octabox as main camera left, 3' Octabox as fill high over camera, 3' Octabox as hairlight (turned way down) and a gelled background light. Here's what I came up with:
