I need to create some collage sized at 11"x21" for a two page book spread. Since my verson of FotoFusion will not render that large, I thought I could design it at exactly 1/2 the dimensions, and increase the rendering resolution to 500 dpi.

Then I can take the export into Photoshop and resize it to 11x21 and a 250 dpi for printing.

Other than the fact that I'm not quite able to push the image up to 300 dpi in the final version, do you think this will produce acceptable quality?

The original resolution of the JPEG's brought into FotoFusion is high enough to have enough original detail. I'm just not sure what FotoFusion will do with it.

My alternative is to just bag FotoFusion and do all the composing in Photoshop but I like the easy of using FotoFusion for shaddowing and alignment etc...
 
You should be fine doing things this way. However, if your collage contains images with borders that are tilted rather than vertical or horizontal with 90 degree corners, then resizing in Photoshop may cause interpolation "jaggies" in the borders of the photos.

I did what you did once and after seeing the jaggies in the white borders of the photos I upgraded my version of FotoFusion so I wouldn't have that problem.

Again, if your collage doesn't have tilted photos then you won't notice obvious problems with interpolation and you'll be fine resizing as you said.
