Not an answer but maybe some info. Long ago in the film world it was drummed into us that glossy papers had the maximum dynamic range. I tend to use glossy for most things, assuming the same thing is true for inkjet (Canon PRO-100).
Fairly recently I tried some Red River Polar Matte instead of my usual UltraPro Gloss. I was amazed at how good it was. I didn't know you could get that kind of pop and dynamic range from a matte paper.
Print size will affect your choice. I'd avoid heavy texture for smaller prints, but it can work great for the larger ones.
Paper has come a long way, and I don't think there are many bad choices. Just get a sample pack and see what you like.
