What camera is best for me (Z5ii, z6ii, z7ii)?

Great choice! I went with the Z5ii over the Z6iii - I put the money towards the 24-120mm F4 S lens and I am so glad that I did! The lens is amazing is all I can say.
 
Just got an email that the Z5ii no lens option was back in stock at B&H so I ordered one. I also noticed the 24-120 f4 if added as part of a bundle was a further $200 off, which is $300 of from list price so I added that and an extra battery to the order. I will give it a good workout ASAP to see how I like it.

I am headed to Watkins Glen next weekend for the race so I may take the Z50ii and Z5ii with me and i think I may rent either a 100-400 or 70-200.
This is a good choice. While the z7 II is appealing because of it's high megapixel count, the AF can be frustrating to use so I think you made a great choice. The Z 100-400 should work fine on both bodies (it will give you a 150-600 equivalent AOV on the Z50 II).
