My first thought was Cappadocia in Turkey. But I don't think they use cut stones of the sort we see in your second shot. OTOH, such stones are very much a feature of where I am staying atm, in the South of Italy. And perhaps in Spain or Portugal. As I have to make a guess, what about the CastleNuovo in Naples?
 
No, but the country is right.

The holes in the background of the first photo are made for pigeons. There are many excarvations here (under the town) during the last 2500 years.
