I'm one happy camper !

I love that tool in PS7 that allows you to draw a line and then rotate the frame automatically to the proper degree.

Fortunately, nobody but photographers notice this. LOL. Seriously.
Yes, you are right. My mother-in-law keeps submitting photos to her local newspaper, and often the horizons are sloping. She had one published recently, and you could ski down the horizon it was that bad, but it was still an attractive pic, and she got paid for it too, so can't be bad!

It's one of my "things" that I fret over in my own shots, and I'm perhaps overly sensitive to it :) Like you say, non-photographers rarely notice!
To really test your camera, put it on a tripod, and use a
hot-shoe-mounted bubble-level.

When I did that, I proved that my camera is fine, and that it's ME
who's tilting the images.
Oh, I'm confident it's me and not the camera. Same as the camera shake :)

...did the front, rear focus tests / hot, cold, dead pixel tests / jpg, RAW detail test / Flash pop up and down test / self-timer test / AI Servo AF test / 3200 ISO grain test (I'm sure I missed a few...)

NOW I have to do a Bubble-Level Horizontal Vertical I am off Tilt test???

Yup. LOL.

There was a guy who complained that the 1D (I think it was the 1D) seemed to always have a tilted sensor, or something to that effect.

Photography -- just another word for compromise

Hi Simon,
yes, I own the DImage 7 ( not the 7i or Hi ) too. I just sold an
E20, and have a C-2100 as well. Camera geek, eh?
I was juggling the camera, a tripod and an umbrella, I forgot to
mention it was raining when I shot this. LOL!
Do I have to cover my 10D with an umbrella while shooting in a drizzle? I hope not...I hope I didn't have to wait for a more well sealed camera.

Anyone worried about or have trouble with water damage?

It should be about the sameas any other consuler camera - not weathersealed but not likely to get into too much of a twist about a few specs of rain.

There are plenty of bags you can buy to put your camera in with the lens poking out and space for your hands underneath, or just custom-build your own with a transparent plastic bag and a penknife.

If you want wethersealing, you are not only going to have to go fro something in the D1 class, but buy L class lenses, as they are the only ones which are weathersealed.
Cheaper to replace your 10D if it gets waterlogged!
