If I don't want to get involved with special effects, layering, or altering, which Adobe product is more appropriate? Mainly I'm just looking for an easy to use program that best handles the issue of correcting color and brightness levels, redeye, etc and also to crop shots into a 4x6 format.

Elements is more than powerful enough to to the type of work you describe.
 
But Album also give the user more flexibility organizing files?

i have paintshop pro..... good program for a good price.....

i started with MGI photosuite (bought at Staples for $10.00 3 years ago when the "new" version of MGI came out)..... pretty basic program, easy to learn, has the tools for everything you mentioned you wanted to do...... but for viewing, i prefer ACDSee (one of the best viewing / storing / filing systems IMO), my (3.1) version doesn't have much as far as "enhancements" go, but maybe the new "version 5.0" does... doesn't hurt to look.

i've said it before to you chris "its better to have it and not need it, than need it and not have it", so with that in mind, check some of the "better" programs....... who knows, you may deceide to play with your pix more than you thought, and there are plenty of websites to help along the way (example http://www.pspug.org/ they have a "class" online that teaches you)

Just grabbed a copy of Photoshop Elements 2 and DAMN what a difference over MS Photo editor! The fill flash feature stomps the standard brighness controls I was used to. Thanks again guys!

Another option, if you have a mac, is iPhoto. Its basic (really basic) editing options are brightness/contrast, redeye, and color correction. You can also very easily keep your photos in order, and crop them to 4/6 format.

but you gotta have a mac.
