I'm trying to optimize the settings for

Contrast
Saturation
Sharpness

Any help would be much appreciated

If you are completely opposed to even the smallest amount of post processing, then I would recommend:
Contrast 0
Saturation +1
Sharpness +2

These settings produce nice results, but it is really a matter of personal preference. You can start here, then adjust as needed.

If you don't mind tweaking the jpeg a bit after the shot, then I recommend:

Contrast -3 (captures the most DR in jpeg; low contrast images can be increased in post)
Saturation 0

Sharpness 0 OR -1 (many people prefer to sharpen in post, the results can be better than in-camera sharpening)

The best results come from raw; in which case the Contrast, Saturation and Sharpness settings are not applied. It is relatively easy to configure Lightroom to apply your preferred processing to all imported files. Then it is no more work than JPEGs. You can tweak only the files that need it. And all your images benefit from advanced processing instead of in-camera processing.

I have been using the following:

Standard color mode
Contrast 0
Saturation 0
Sharpness +2

I've shot almost everything so far in P mode, with Auto ISO and AWB.

Some examples with these settings:

I like to do minimal post-processing -- the above shots were just resized, then I applied a little bit of unsharp mask after resizing, then I saved them at 90% JPEG quality. I added a step to crop the last one to fit my monitor's 1920 x 1200 resolution, but otherwise it's the same processing that I did with the others.

Here's one where I added a little bit of levels adjustment to make the flowers kind of "pop" out of the background:

Thanks Randy and Tom, I have something to work with now.

I'm not opposed to a little processing in Lightroom, but I really don't want to be pushed into RAW since it is so time consuming.

Contrast -1
Saturation 0
Sharpness -1

But I also shoot 5 MP images (Small) all the time, and does a little
adjustment on the JPG's if needed later.
Typically the adjustments are
crop --> curves --> resize --> sharpness
All done with free image software "FastStone Image Viewer".

The JPG's from RX100 has almost become my RAW files.
That is why I turn down contrast, saturation and sharpness so you
can edit later if needed. (I had all 3 turned down more before).
