Ulfric noticed that the language included a lot of self-massaging. That's not homespun psychology, it's human nature and most people don't see it (especially those who are doing it). Lots of people apologise to make themselves feel better, especially if they can bring themselves up a notch with the applause of the crowd, which is quite rewarding in it's own right. I know you don't want to hear this, but to your credit, most people have no idea they are doing so. Consider it an opportunity to grow; not to learn how to better hide your grandstanding, but actually how to apologise.
