Looking to improve my photos

You've received some very complicated advice, and some unflattering characterizations of the 70-300vr lens. Keeping it simple, just shoot when there's some light on the subject. This example was taken with the 70-300vr at 300mm.
Exactly!

Also, from the reflections in the eyes it appears that flash was used (two flashes for the hummer?)
No flash with the finch, 3 with the hummer.

I do have an old tripod. the head was broken and I thought maybe I could add a ball head to it. I took the old head off and I am left with a shaft that is internally threaded, and the screw that held the old head on. I think it was a tripod for video but it held my old P&S fine. How do ball heads attach? do new tripods have externally threaded shafts that the head screws onto?
 
You are at the weakest part of that lens. My recommendations is to pull focal length back to about 240mm (270mm max) and stop down to f/7.1 (f/8 ideally) and try again. It will sharpen up a good bit.
