What is the best way to lock the focus to, say 15 meters?

I want to take pictures of waterskiing and not be bothered by focussing each time. If I use manual focus, there is a great chance you hit the manual focus ring and it goes out of focus.

Use the spot AE/AF button.

You will have to set this up appropriately in the menu. Once this is done you pick your focus point, hit the spot button and the focus and aperture are set until you hit the spot button again.

Note you can still manually adjust the focus with the focus ring so you still need to be careful how you hold the camera...

Modifying the focus after using the AE/AF button to lock the focus sounds like a DMF issue, it should be possible to turn DMF off in the menu.
