How can I clean or with what the "plastic" of the viewfinder in which the mirror is reflected ?

Sorry, I don't understand what you are trying to clean.

Are you trying to clean the reflex mirror of your 7D, what swings up and down when you take a picture? Is it unclean with dust, fingermarks or what?

When you take out the lens, there is a mirror which relfects up to the viewfinder in a "plastic" or another "mirror" I don't know exactly from what it's made.

There are 2 pieces and is dust between them. I can remove them by detaching that small metal clip.

The question what to use to remove dirt completly, cause new dirt it's putting there when removing the existing dirt.

Right thats the focus screen which is not easy to clean well. You can remove it and use a rocket blower or something...sometimes helps..but its a tough one as the actual clear screen itself is a static dust magnet! Nothing to do with digital, 35mm slrs are the same.

I wouldnt go mad and use any liquids though....either blow it off or get it cleaned by a pro store once in a while....small specks are not a bother really

If I'm understanding you correctly the problem is dust in the area between the back surface of the focusing screen and the front surface of the fresnel lens. I know exactly this problem because I have had this problem with my film 7 camera and this would be similar to a 7D.

The front surface of the focusing screen (the surface that faces the swinging mirror) is not smooth and has engraved concentric circles. Dust easily gets trapped in these circles and is sometimes very difficult to remove. If I can't easily remove the dust I just replace the screen. Much easier. I keep a stock of replacement screens for this purpose.

When I replace the screen I don't refit the screen retaining clip until I look through the viewfinder to ensure that there is no dust. If there is dust I just unhinge the screen and blow using my mouth into the area between the screen and fresnel lens and swing the screen back into place and look again into the viewfinder to see if there is dust. I keep repeating until there is no dust and then refit the focusing screen retaining clip. If you find a stubborn piece of dust that won't budge by blowing then I would use the corner of a dry lens tissue to dislodge it, but I have not experienced yet the problem of stuck dust in this area. I have since bought a 'Rocket' blower bulb and will be using this instead of blowing from my mouth because there is always the risk of spitting (I've been luck so far.) But don't use compressed air from a can because it contains a propellant that will dull the surface of the fresnel lens. I used canned air once to clean the silver reflector of the flash unit from a compact camera and the silver finish was ruined as a result.

I remember reading here about somone who got a new focus screen and he called the maker of the screen because he was having a hard time with finger prints and dust and was told to wash the screen in dish sope! Now I would try and look this up first before doing it but the guy was 100% happy how it came out. Does any remember this post? Maybe you could post a working link to it.. Thanks

he called the maker of the screen because he was having a hard time

You can wash it! tried it! no probs! avoid solvents of any kind and make sure you dont scratch the screen too...
