I have being stuck at home too sometimes mostly because of this winter days where it freezing outside.

What Ii have been doing, and I find a lot of fun is, taking pictures of various objects around the house with avalilable light at iso100 but with very lslow shutter speeds (you will need a tripod though).

I took a day last month, and shot all of my stuff for insurance purposes. I went to each room, opened cabinets, and doors and stuff, and documented everything I owned. Took close ups of special things like jewlery and stuff, and anything "priceless". Then I burned a couple of CD's and I keep one at work, and one in a fireproof safe. Hopefully I will never need them, but if I do, it will help alot with the insurance company.

Take pictures of yourself by using a tripod or shoot your pet.

You can also try to set up different objects together and play with composition, light and DOF!!

I have a bert puppet that I took about 30 pictures of him popping up everywhere. (in bed, watching tv, being interviewed by tv, annoying my cat, in the background of pictures of me and my wife doing ordinary things, (kind of like where's Waldo) Its a fun project and you will be rolling when you slideshow the pictrues. I also did this with a hidious trukey, we took it to Jamestown and photoed it all over. Then we turned it into a center piece for the table for thanksgiving dinner. You can use about any stuffed animal.
