I haven't owned a Canon compact or small sensor digicam before but I do own the Canon 20D, 300D, AE-1, T70, etc.
My 'P&S' digicam for the last 2.5 years has been the Sony S75 (great camera btw...).
While returning my three day old A95 to exhange for a Sony W1 (that's another story entirely...), I had a chance to handle both the G6 and the V3.
I honestly tried to be objective as possible when comparing the G6 to the V3. I was truly amazed at how cheap the G6 felt in the hand compared to the V3. It was like comparing my Digital Rebel to my 20D. In fact, certain aspects of the V3 build quality are actually BETTER than my 20D (strap mounts, main dial, finish).
I never compared a Sony to the G5 or G3 cameras, maybe they were better built? I just can't belive how better the Sony build is. From my S75 to the F828 to the V3-all of them look, feel, and handle top notch. The one area that Sony seems to continually beat Canon at is the build and AF.
As far as performance, well hard to actually judge AF speed in a well lit store, but shot to shot times and shutter lag are definately better with the V3 (my own subjective feel ).
At the same time-neither the G6 or the V3 felt particularly good in hand to me (the V3 felt somewhat better).
Looking at the G6 and the V3 side by side without even handling them the V3 looks like a much more serious photographic tool. Picking them up and using them the V3 gets the nod again for its faster (shooting) performance. As far as image quality goe-well some would give a slight or even better advantage to the Canon, but for me that is not the only criteria to judge whether a camera is right for me or not.
Considering the price, there is no way I'd pay $700 for the Canon. But I would for the V3. Fortunately for me I was able to walk away with the W1 for $290!
Just my two bones...

Just think, if every key-stroke was a shutter-press we would all be pros by now...
