Pressing the MENU button while in record mode displays the record menu over the live preview image. In the captures below a black background was used for clarity (normally you'd see the live view 'behind' the menus).
The menu is split across three pages which can be accessed by pressing the left or right arrow on the 4-way controller, press down to enter the menu proper. It's a shame the last two menus don't have a more helpful description other than 'Custom'.
Record menu: Basic
Changes Autofocus drive mode:
AF is triggered when shutter release is half-pressed or AF/AEL button, in AF-cont. mode the camera will continue to focus while finger is half-pressed (doesn't lock). I personally found AF-cont. to be virtually useless. The standard AF is so slow that it can't keep up, if you set the camera to AF-cont. the camera tends to just scan aimlessly for a focus position.
Select different exposure metering systems:
Multi-Segment metering uses 300 different segments of the scene to measure luminance (brightness) and colour in combination with distance information to calculate exposure.
Select flash mode:
The D7's red-eye reduction is executed by firing the flash twice at relatively high power just before the final flash.
Set flash power output compensation +/- 2.0EV in 0.3EV steps. This controls the power of the internal flash to allow you to compensate for very close or distant exposures.
Set flash metering mode:

User setting memory:
This option allows you to store camera settings in one of three different 'user memories', this can be useful for quick recall of settings for a particular type of scene, or for different users.
Set auto exposure bracketing step:
The D7's exposure bracketing system takes three frames at normal, under and over the metered exposure. This menu option sets the amount by which the camera adjusts the exposure each time.
Time-lapse Interval / Frames
|This menu option allows you to set the number of and interval between frames shot as part of a time-lapse sequence. You can choose from between 2 and 99 frames to be shot every 1 to 60 minutes. In time-lapse mode the camera shuts down the EVF and LCD and only indicates activity on the top status LCD.|

Soft sharpening offered the cleanest images, though may require third party sharpening later.
Select colour / black & white mode:
The D7's black and white mode is a simple 'desaturate' there's no clever channel mixing going on here.
|The data imprint option allows you to automatically overlay a piece of information / text onto the bottom right corner of each image as it's shot. This can be the date, date and time or a piece of free text or ID. Selecting the Text or Text+ID option displays the 'virtual keyboard' above which is navigated using the 4-way controller. (Remember date and time information is recorded in the JPEG EXIF header and so can be something easily retrieved later).|
Set the method of instant playback after shot has been taken:
Both the 2 and 10 second instant playback displays can be interrupted by simply half-pressing the shutter release (except for RAW or TIFF files which blank out the display until the image has been written).
