As with anything RAW format, if you know your editing - color grading you get great results out of any camera, i wouldn't just shoot jpeg with it

I would say your plan is right, I currently own 6400 - 6300 for portraits and video client work / I kept my trusty a6000 which I bought new less than 2 years ago, My plan is exactly same as yours ...

i heard in 6400 and newer a6k cameras is fine just struggles in AF in older cameras

Glad you were able to buy it and are happy with it / is definitely great, reviewers can be way to harsh at times, the real review is your own usage

Only thing that affects it is the codec - settings / to get the most out of the 6300 you should use XAVCS format not MP4

Per Most youtubers color science of a6400 matches the A7III i own a6000 / 6300 & 6400 a6400 definitely has different - better color science
