I've have good luck with snow visiting in late December. Micro-spikes have worked really well for me walking around with snow/ice on the ground.

That sky is getting used way too often. Best to use your own sky images when you replace it.

For me, the East Canyon of Zion is the most photographic part of the park. Canyon Overlook trail at sunrise has a wonderful view. Lots of places to park and photograph along Hwy 9 in the East Canyon.

Like some others here I visit the parks in your plans quite often. You can buy hiking boots if you think that you need the support but I like the lighter trail runners and have never had an issue ...

Has Nikon quit supporting Capture NX-D completely? I know about NX Studio but after using NX-D for so long it looks like it's not compatible with the newest Big Sur update.

Photoshop works well plus you can add your own sky images to the library. It comes with a couple of replacements and one in particular that you see being used quiet a bit so better to use your own ...

I believe you but......all of the Toyota dealers in my city are so short on new vehicles they are putting their used cars on the new car lots.

I usually try and get a little foreground into the frame to space the the higher background.

For landscapes I would suggest adding the Nikkor 24-70 2.8 in addition to the 14-24.
