I think you're seeing what your brain prepared you too see. Without knowing the brand and exif data, I highly doubt you would lament the lack of "color depth", for example.

I wouldn't shoot with a single prime at all times, but I can see how it could help one's creativity. I don't think shooting only at F8 or only at ISO 800 would have the same effect. Framing is...

When you're using only a prime, you're seeing the world through a single focal length while walking around, which can help you spot things you might miss otherwise. I think that's the idea, at least.
