I have a Monochrom that I bought in 2015, and of course the sensor didn't start to crumble until after the date that Leica said they would issue a new one. Does anyone here know of options available to replace the sensor? Leica says they no longer have any sensors, so they won't fix them.

There are different ones, the one I have heard most mentioned is kolarivision.com

Have't heard of anyone who got into trouble or even changed visual look by fixing their sensor.

My own M9 Monochrom has corrosion, but so tiny it doesn't bother me.

There are no replacements. Leica used all that were left to refurbish corroded M9s they took in trade so they could sell them again. However, several of the companies that do IR conversions also offer to repair corroded M9 series sensors by removing the corroded sensor stack cover glass and replacing it with a new corrosion proof cover glass. KolariVision, here in the US is highly touted for their work by many of their customers. Prices seem to start around $1000 and go up from there. Also, you need to think of this as open heart surgery for your M9M and there is a risk the patient won't survive...
