Canon R6 Mark II menu inaccessible while in Interval Timer mode

When I shoot time lapse in Interval Timer mode (sequence of pictures, rather than in video mode) I can't access the camera Menu nor Quick Menu while the guy in this video can do that.

Why? Is it because he's using an external intervalometer which is not blocking the camera menu?

Probably due to his use of the external intervalometer which is basically just a shutter release . Why do you need to access the menu during a series of exposures?

I wanted to disable high exposure noise reduction which was causing my camera to take a lot of time to save pictures to the memory card because my time interval was set to 6 seconds and with this option turned on I couldn't increase the shutter speed to be higher than 2,5 seconds so I was basically stuck at 2,5 seconds shutter speed which was the reason why I had to terminate the time lapse after some time.
