The left side of that you can activate various option if you want them. The right hand side you set the options. For instance, the first one you can set the case. It took me a few minutes to realize you can manipulate both sides on this screen – I think it's not the most intuitive UI choice. Usually everything leading with a checkbox implies that you can only set a checkmark for this. But in this case you can also click into the box on the right hand side. It's cool once you realize it but threw me off first and that's coming from someone working in the software design industry 😅

Slightly off topic (sorry) but I have another quick custom button question: is there no way to set up a custom button to toggle through different metering modes?

On other camera brands I usually made use of this this, mostly to have a quick way of using highlight or spot metering for the occasional high contrast shot (e.g shadow silhouettes).

This is a great question, which I have also posted few days ago, but haven't received any answer yet. So I also would appreciate some insight.

Yes. There are several ways.

One way is to press the Q button on the back of the camera.

Another way is to press the M-Fn button on the top of the camera. You can register up to five custom functions with the M-Fn button, including AF mode. To customize the featuers you can adjust with the M.Fn button, use the Custom Function Menu (C.Fn), and select "Customize Buttons." Select the M-Fn button, select up to five functions you want, and then the next screen lets you order them.

This is how it works with my R5, but it's almost surely the same with the R6 and R6ii.

Thanks – I was aware of this option, however I was interested in a more direct way to get there, i.e. to set just one button to either use directly a certain metering mode (other cameras allow this, for example a 1-shot spot metering shot) or toggle through the modes by pressing a button (Nikon and Panasonic let you do this). It seems so far though, as if Canon doesn't offer anything like this.

You are not the only ones me that made that mistake

Then configure the M-Fn button so that the only option it configures is Metering Mode. Problem solved!
