Uncropped 4k/60 options? Or am I being stupid

I am sorry, what is your point? The cameras I listed do NOT add an additional crop for 4K 60P and the camera you named does.

For a full frame camera, avoiding the APS-C crop cameras, the fx3 does not crop for 4K 60P. Looking back at the OP, who seems to want FF, then the fx3 delivers. The fx30 has the advantage of oversampled 4K 60P, while the a7IV extra crop does not. so extra cropped FF 4K60p is inferior to APS-C uncropped 4K60P.

My point is that when you buy a 2500 dollar camera today you still get 4K60 with a crop....4K60 is not like sci-fi anymore but for camera manufacturer with their slow evolution incremental upgrades-business strategy this is the reality.

I agree with that.

I think the best option is the fx30 with an 11mm f1.8 lens: you get oversampled 4K 60p, and you get the FF equivalent of an 18mm lens. Wide, smooth motion, and sharp. And $1700 for the camera.

I tried the Aps-c route, currently owning a ZV-E10 and while the Aps-c size probably fit my needs for video, I feel that for photos I definitely want to have full frame. I also don't wanna have several cameras just because the non video specialized FF-offerings are severely limited from what today can be seen as standard issue features. It's impossible not to compare to what you can get in phones (a general purpose device), GoPros etc that you cannot have in the "specialized" options unless you go for the most expensive several thousand dollar cameras.
