R10 sounds more appealing than RP that would have been the FF I would not really want to buy...

Usage: Outdoor in tough conditions (alpinism, hiking, climbing, etc..) weight and volume matter.
Shooting range: 24 to 200 on crop. (what we do with SL1's Sigma 18-200 DC HSM-C and sometimes prime 100mm)

Improvements I am looking for: SPEED. AF accuracy. 
What I want to keep: Weight, ergonomics of the Canon lineup (SLx).

I know I will loose on battery life...

Any advise or feedback?

I think the R10 or R7 are perfect for you.
I don’t think full frame will give you much. I don’t know the R10 well but the R7 sensor density is very high, so if you shoot 200mm, for example, and you use that same lens on even an R5 and crop the image to match, the R7 will have higher resolution and probably better sharpness.

Battery life is not as good with the mirrorless but there are many battery saving settings you can make, such as fold the screen in and only use the viewfinder. I always carry a charged spare battery with my R5. They’re very small anyway.

I currently shoot with an RP based kit and an SL2 based kit.  The RP is light years ahead of the SL series.  The viewfinder is amazing in comparison, the AF is a several levels ahead, that 6D sensor produces nice images and  yet it's still reasonably small and light.

If you wanted more of a like for like replacement, have you looked at the R50?  I'm probably going to replace my SL2 with an R50 and expect it to make a big improvement in my keeper rate in my kayaking photography.

I would get R8.

I bought RP w/ 24-240 while waiting on R5. Since then I picked up an R7 w/ the "kit" lens they sell as a combo. Not knowing where you live and the availability of camera stores, I'd see if Best Buy has the R's in stock so you can feel them.

Since SL-1 is a crop, an R crop may be your best bet.

That Sigma 18-200 won't give you a full screen on the RP.

I'll look into it. Indeed it seems to be a natural continuation of the SL lineup.
As long as we still find the manual settings we use in the SL1 it seems to be an excellent option. It is even 8% lighter than out SL1!

R50 to replace the SL1, R8 to replace the 6D.

You could splurge on the R6 II if you want IBIS though.

If you get the 18-45 stock lens on the R50, it can replace the RX100, if it doesn’t have to pocket. I had an M50 mark II and 15-45 (same size and weight), it stays out of the way like a point and shoot. The question is pocket or no pocket…

Alternatively, that R8 with 24-50, is pretty compact too, powerful.

So, given what we have, do you think the Canon EOS RP would be a big step forward for what we are looking for? And if so, with an RF lens? or what we have is more than enough?

Examples of our body/lens usage (I included a bit more SL1 as this is the one that will be replaced):

DSC-RX100M1 37mm f/6,3

DSC-RX100M1 10mm f/10

EOS SL1 (100D) Sigma 18-200 18mm f/9

Canon EOS SL1 with 100mm f/2 at f/10

EOS SL1 wit 18-55 at 27mm f/4

EOS SL1 with prime 50mm at f/4,5

EOS 6D 14mm f/2,8

EOS 6D wit 16-35 at 16mm f/4

I have both 6D and RP and I think you will like the RP very much.

I use it with the EF 20mm 2.8, EF 28mm 1.8, EF 40mm pancake, RF 24-105 f4-7.1, and RF 35mm IS f1.8 (which I love) all those EF lenses will perform even better with the RF, the focusing is fast and precise, is very light and portable and those extra 6mp comes handy for cropping.

At current prices I could say is the best full-frame bargain.
