Recommendation and help

I was set to buy a FZ80.  Then I started reading how a FZ300 could be used to take more crisp pictures due to a better sensor and better use of it's f2.8.  Crop is used nstead of zoom? I was convinced I needed a lot of optical zoom, now I don't know if there is a better method with different equipment than a megazoom?

Scenario - lots of opportunities to photograph deer between 50-175 meters.  First and last hours of daylight.  Camera will be on a tripod with solid foundation.  Very willing to capture from video if needed.

Goals - spend less than $400, capture deer well enough to see eye lashes and wiskers.

Need help - Will a FZ80 give me the clarity I want at that range at that time of day (without direct sunlight)?  Will a different camera do better if I learn how to use it right?
