Tablet workflow, why Capture one? Image qualities, RAW etc

I recently (1 year ago) switched to a tablet for editing photos. I had a cheap Samsung tablet and loved it so now I bought the newer Tab S6. The S6 comes with a pen aswell.
The workflow is fast and precise. I normally start my jpg edits in snapseed and finish them in lightroom if needed. I wish they would havd a good RAW app for tablets but I have not found anything yet. Ideas?
I've had and tried Photoshop, lightroom, affinity pro, capture one, pixlar Vcso etc on my Mac computers, but for jpg, snapseed has the fastest workflow for me. I spend max 1 minute per edit unless it's a print or work.
WHY RAW?
Now I've sold A1 prints shot as Jpg with the 18-55mm kit lens, edited in snapseed and it came out amazing on a thick Hahnmule print. I've shot fineart in jpg and printed limited edition prints in A2 that were great even standing 1 cm away from the print.
Just had 26 photos published in Fuji X Passion magazine and they were all shot as jpgs and edited on a tablet in snapseed.
So why do we need to edit RAW in Capture one? Why do we need to shot in RAW. Is the differences that huge compared to the others once it is printed? I shot 500 photos in RAW yesterday but ended up not using one single RAW for edit. The jpgs were good enough
I like to get it right in camera straight away and then do minimal edits.
Maybe its just me and I'm doing it wrong. But as long as I got clients, my prints look good on the wall and I get the shots I like I 'm happy.
I've been a Mac user for the past 11 years. Fixing my photos on Imac and Macbook pro. But the past year I have not edited a single photo on them.
Here's a shot from a photoshoot I had yesterday. It's not perfectly sharp but I like the vibe of it.
