A7iii vs resized A7Riii photos?

Ok the A7Riii is superior to the A7iii but the price difference is still pushing some questions, of course the large 42mp sensor let's you crop more while keeping large photos, meaning a 24mm lens is like a 35mm if in 24mp, a sort of zoom lens!

Though besides this freedom of crop , I wanted to see if you actually win something else by going into the expensive R version in terms of IQ

The A7iii has a very slight advantage in DR and better AF that can help avoid missed focus.

But what about the details and sharpness using the same lens? Will resizing from A7Riii 42 to 24mp give a better result than the A7iii 24mp? A Sort of pixel binning?

Short answer. Yes.

Long answer. It's a bit more complicated.

Shooting the a7RIII in crop mode yields an 18MP file. I use this a lot in event work, where 18MP is plenty, to turn my 85mm into a 130mm.

"Superior" depends on your needs. The A7iii for video especially will have an advantage in high ISO. For photos, not so much especially when resizing to the same image size. But yes, for me the A7R3 is the one that fits my needs better.

Not sure where you got the A7iii has an advantage in DR. Also, it does not have better AF, that is a misconception that people keep repeating. It has MORE focus points so if you need tracking all the way to the edges of the sensor then sure it will be better, but aside from that, they have the same system.

But what about the details and sharpness using the same lens? Will resizing from A7Riii 42 to 24mp give a better result than the A7iii 24mp? A Sort of pixel binning?

The A7R3 detail will be superior not only because of more MP but also no AA filter. Now comparing them at the same size, depends on how you are comparing them. Small print, screen, etc. One benefit of resizing will be less noise visible on the R3 in case of high ISO photos.
