I shoot full manual exposure (ISO and White Balance also), with the aperture wide open to maximize the shutter speed. All exposures will be identical no matter what the subject, composition, or background. You just have to keep an eye on the light and adjust for changes.

Do a quick review of an image occasionally and watch for the Blinkies too.

I also shoot bursts in AI Servo (Back Button AF) with mainly the center AF point. If the subject is distant, you can AF on the (high contrast) jersey for instant lock-on.  Closer, go for the head/eye.

For starters.

Good luck!

Inside or outside?  I broad daylight or with artificial lighting?  Close range of full size soccer field?

It depends on so many variables, like the lighting and distance and so forth. If you want everything in focus stop down the lens like to F9 or F10 and use shorter focal lengths. If you want subject isolation then you can zoom in on them, but watch the backgrounds. Make sure you have a high enough shutter speed. If you are on the sidelines wait until they are running towards you. It's easier waiting for them to come to us, than for us to chase them around. At least that has worked for me. There's so many other comments that we could make, but I'll give you at least these as a starting point.

Here's one example under dark cloudy skies and intermittent light rain. Watch all the players so you capture them all with reasonably good composition, as I have done. I prefer to take photos of them showing the faces with expressions and I like to have the ball in the picture too.

I hope that helps.
