And there is the matter of video, as well.  All these converted cameras shoot movies too, so that gets me thinking of infrared video.  Is there a process in software similar to what we find for stills?  I know how to set white balance for a movie (I use PowerDirector), but if there is a way to swap channels, I haven't heard of it.  What about that last step?

How does everyone process their RAW files for infrared?

I use RawTherapee.  It has been tweaked to extend the range for white balance, so colour cast in IR images can be neutralised:
