Do you still prefer a D70 over a hacked 300D?

Ok...what about lenses

None of them impress you? or are you speaking about a specific size lens in a particular price range? It wouldn't surprise me if in a particular area Canon has some better glass. Therefore what? If that is the only thing you intend on ever using, then I would agree with you, Nikon is not for you. But if you cannot find yourself to be impressed with ANY glass from from Nikon...well, there just isn't much to say about that. It's really subjective. if you don't like it, you don't. Any anyone trying to convince you otherwise is just wasting time.

Granted I'm very new to all this, but I'd be very surprised if you looked over some "impressive" photographs and could tell each and every time what camera/lens brands were used.

Check 80-400VR, at 400mm stopped down a little bit isn't too bad.
