Exposure bracketing, manual mode, R7

I'm trying to sort out some things to photograph the eclipse. It looks like I can automate this using high speed drive mode and exposure bracketing.

It looks like (from a test run), when I am in manual mode with manual iso, bracketing adjusts exposure time, but Canon does not seem to document this particular detail that I can find.

Is this correct, or will the camera's 'ai' randomly decide what to adjust?

Edit: Secondary question.  The manual states that you are only able to shoot three images when bracketing, yet I was able to set bracketing to 7 steps.  Was this a software upgrade?
