Florida birding recommendations

Hi all,

Looking to go down to Florida for a week in Feb for some bird photography for the first time. Some target species include spoonbills, tricolored herons, oystercatchers, burrowing owls, scrub jays, and painted buntings.

Current plan is to fly into Orlando and spend a few days at Merritt Island. If I don't get any good spoonbill photos I may pop down to Stick Marsh as well. Afterwards, going to make my way over to St. Pete's - may stop at Orlando Wetlands, Gatorland (for the birds), or Circle B Bar Reserve, depending on how the first few days went.

Around St. Pete's I plan on spending a couple of days at Fort De Soto, and may make a day trip down to Cape Coral for burrowing owls.

Thoughts on this rough itinerary? And must-do's or must skips? I'd love to visit the Everglades as well but seems like a bit much for one trip. Thanks!
