In the end, after some debate, I ended up buying a Canon R6 Mark II. Yay! However, I now need to order a couple of memory cards as well and the question is, which ones?

I'd be tempted to buy two 128 GB v90 cards like the Lexar 2000x or the Kingston Canvas React Plus so as to have the fastest buffer clearing as well as great performance when recording video. My logic is that, at least for photography, I'm not going to fill up the memory cards. I'll run out of batteries (even with a spare battery) faster than I'll run out of room.

On the other hand, maybe v60 cards are good enough and I could easily get 2x256GB v60 and save money over 2x128GB v90. And the extra space could be handy for video.

What do you folks think?

I went with one Sandisk 128GB UHS-II V90 card. Love it, it writes so fast! On the other slot I still have the old Sandisk 128GB UHS-1. I'll wait until the summer to get another UHS-II card.

If you’re writing to both cards, the camera will write at the speed of the slower card.  You might test to see what happens if you have the second slot populated, but are not writing to it.

ps. I really like the Sony G Series (with M Series as backup).  Only 1 slot populated tho.
