The work horse for hummers around here has been a d500 with sigma 100-400. I got the R7 with rf 100-400 for a big weight savings high res sensor and advanced AF. The majority of the thousands of shots in the past with the d500 have been in the 1600 to 2000 SS range. That gives sharp eyes with some wing blur and not super high ISO with slow zoom lens. Have shot them into the sun at 8000 SS or so to get a rainbow effect in the wings. The only way to really dependably freeze the wings is with a multiple flash setup. Not had the R7 very long but electronic FC seems better than mechanical as less movement. Will try full electronic also to see how bad the wings look. Not worried about the sound or shutter shock as SS speeds are very high. Hummers are not bothered by sound that much around here.
