I've not noticed any notable colour differences between the R3 and R5. If anything, they're certainly minor - and nothing like the over saturated colours from Sony days.

As an owner of both, but recently sold my r5.. the WB is the key difference. Its night and day.. R5 is 60% wrong when set on AWB. The r3 just NAILS this.

I'll also say the rendering from the R3 has less of a warm bias, its very very neutral. It seems a little less magenta than the R5, so skin is fairly balanced and in post its easy to go in whichever way you want to go. I also think the files seem to have 20-30% more latitude than the r5 when pushed in extreme cases.
